Easy Peasy Southwest Vegan Egg Muffins

Ingredients

Oil for spraying

2 cartons Just Egg (egg replacer)

½ red bell pepper finely chopped

 

½ red onion

Handful of spinach (finely chopped)

½ cup plant-based cheese (I used a Mexican blend)

¼ cup Black beans

Pepper to taste

Garlic powder

Onion powder

Directions

Heat oven to 350 degrees, spray a 12-cup muffin pan with oil. In a bowl, mix all

ingredients, except cheese. Sprinkle each muffin with cheese on top and bake until egg

is done, about 25 minutes. Allow to cool 10 minutes before moving and serve!
