Chef Mommy’s Vegan Pesto Pasta
Ingredients
1 pack fettucine
1 large ripe avocado
2-3 garlic cloves
3 cups kale
1 cup fresh basil
1 handful fresh parsley
3 mint leaves
2 tbsp fresh lemon juice
½ cup vegan parmesan
½ cup olive oil
Red pepper flakes (optional)
1 tsp salt (or to taste)
Pepper (to taste)
Directions
Boil water for pasta, salt generously, and add a bit of oil. Drain pasta, return to pot,
remove from heat.
In a food processor, combine avocado, garlic, kale, parsley, mint, lemon juice, olive oil,
and salt. Process until smooth.
Toss pesto with the pasta. Sprinkle with red pepper flakes and a bit more olive oil, if you
like. Enjoy!
